On this rainy day, I made spelt challah rolls. they came out fluffy and delicious!

They’re #vegan and #sugarfree.

Ingredients:

5 ½ cups spelt flour
3 ½ tablespoons yeast
1 cup water
1 cup almond milk
10 tablespoons olive oil
1 – 1 ½ tablespoons salt

Olive oil to brush the rolls
1 tablespoon nuts, seeds or oats for decoration.

Mix 3 cups spelt flour, yeast, water and milk in a bowl and let it rest for 10 minutes. Then add the remaining 2 ½ cups of flour, olive oil and salt.

Knead for 5 – 10 minutes (by hand or in a mixer with the dough hook).

Put a bit of oil on the dough and cover it with a towel (Tip: I put 3 whole garlic heads to help it rise quickly!)

Let the dough rise for one hour.

(If you double the recipe make the blessing on Challah).

Shape the rolls. My recipe comes out to 20 small rolls.

Put them in an oiled baking pan close together so they can rise upwards.

Let them rise for another hour to hour and a half.

Brush the rolls with olive oil and sprinkle seeds and oats on top.

Bake at 350 degrees Farenheit or 180 degrees Celsius for about 20 minutes or until a bit crispy on top and fluffy on the inside.
