These days salads are rather common in our daily food needs. They are relatively more healthier when eaten raw as boiling them would mean loss of valuable nutrients. For kids and older people it is better if it is steamed – that would make it smoother and taste better.
Beetroot salad is easy to prepare. I borrowed this recipe from my sister who is a teacher and is based in Bombay. These days I prepare it at least once a week since beetroot is available throughout the year.

INGREDIENTS :
Chopped Beetroot (steamed) – 1 cup
Chopped Cucumber – 1/2 cup
Chopped TomatoeS – 1/3 cup
Chopped onion-1/3 cup
Chopped coriander leaves – 2 Tablespoons
Grated coconut – 2 Tablespoons
Lemon juice – 1/2 Teaspoon
Salt – 1/2 teaspoon

PROCEDURE : Peel and chop the beetroot into big chunks. Add a pinch of salt and cook it in the cooker without adding water. Add all the chopped veggies, lemon juice, salt and grated coconut into a bowl and mix well. Place a spatula with 2 teaspoons of cooking oil onto a flame. Once hot, add 1/2 teaspoon of mustard seeds. When they crackle, add cumin seeds, green chili and asafoetida powder and curry leaves.
Add this garnishing to the bowl of veggies ; squeeze the seasoning to get the aroma of fried mustard and cumin. Yummm!!
