Lemon Coriander Soup | Healthy Drink

Total time:- 20 minutes
Serves:- 2 persons
Ingredients
½ Tsp Oil
1 Inch Ginger, mashed
1 Green Chilli, chopped
½ Green Tomato , sliced
½ Cup Carrot, finely chopped
½ Cup Cabbage, finely chopped
1 Cup Vegetable Stock
Salt to Taste
½ Tsp Pepper Powder
½ Lemon Juice
1 Tsp Cornflour
2 Tbsp Water
Handful Coriander Leaves ( garnishing )
Few Ginger, julienne cut ( optional )
Recipe Instructions
Take a Pan
Grease the pan with ½ Tsp Oil
Add 1 Inch Ginger, mashed
Add 1 Greeb Chilli, chopped
Sauté on Medium Flame
Add ½ Green tomato, sliced
( It gives a nice flavour )
Mix it well
Add ½ Cup finely chopped Carrot
½ Cup finely chopped Cabbage
Saute on medium flame
Salt to Taste
Stir constantly till the water evaporates from the mixture
Once the vegetables becomes Crunchy
Pour 1 Cup Basic Vegetable Stock
Mix it well & let it boil
Add ½ Tsp Pepper Powder
Squeeze ½ lemon 🍋
Let it Cook on medium flame for 5 minutes
The veggies should become soft
Add 1 Tbsp Cornflour dissolved in 2 tsp water ( optional )
Stir it gently & constantly
Sprinkle some Fresh Coriander Leaves
Stir gently & continuously for a minute
Remove the Green Chilli’s
Your Lemon Coriander Soup is ready.
Turn Off the flame
Transfer the Soup in a Cup
Garnish with ginger julienne ( optional )
Your Lemon Coriander Soup is ready to serve
