Welcome to another Healthy Recipe Video! I have been craving Pad Thai lately and I didn’t realize how easy it is to make it until I found this recipe! Also, the standard Pad Thai recipe is NOT vegan, but this one is! I hope you enjoy!
Ingredients:
-8oz of rice noodles
-8oz of extra firm tofu, cubed
-2 tbsp vegetable oil
-1/2 cup water
-1 garlic clove, minced
-5 tbsp soy sauce
-2 tbsp rice vinegar
-2 tbsp of raw sugar
-juice of 1 lime
-1 cup of bean sprouts
-1 medium carrot, julienned
-2 green onions, chopped
-garnish: crushed peanuts, lime wedges, and chopping cilantro
Instructions:
-Soak Rice Noodles in hot water until al dente.
-Toss tofu with 1 tbsp of soy sauce.
-Heat vegetable oil in non-stick pan on medium heat and cook tofu on each side for 2-3 minutes until golden brown.
-Mix 4 tbsp of soy sauce, garlic, rice vinegar, lime juice, and sugar. Push Tofu to the sides of the pan and add sauce and noodles to the pan.
-Slowly add water to the pan to cook noodles thoroughly. Just before noodles are cooked, add carrots. Cook for another 1-2 minutes. Then turn heat to low and add beans sprouts & onions. Cook for another minute.
-Plat noodle mixture and top with crushed peanuts, finely chopped cilantro & a lime wedge. Enjoy!
