1.Tropical Smoothie Bowl
Ingredients
1 banana, sliced and frozen
1 c. frozen mango chunks
1 c. frozen pineapple chunks
1 c. almond milk
Directions
In blender, pulse banana, mango, and pineapple with almond milk until smooth but still thick, stopping and stirring occasionally. Add more liquid if needed. Pout into 2 bowls. Top as desired.
2.Baked Kale Chips.
1 bunch kale
1 tablespoon olive oil
1 teaspoon seasoned salt.
Directions
Step 1 :Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
Step 2 :With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
Step 3 :Bake until the edges brown but are not burnt, 10 to 15 minutes.
3.Yogurt and Spinach Dip.
INGREDIENTS
1 6-ounce bag baby spinach
2 plump garlic cloves, halved, green shoots removed
Salt, preferably kosher salt, to taste
1 tablespoon freshly squeezed lemon juice (more to taste)
2 tablespoons chopped fresh dill
½ cup finely chopped parsley
2 tablespoons chopped fresh mint, or 1 teaspoon dried mint
2 to 3 tablespoons extra virgin olive oil
2 cups thickened yogurt or thick Greek style yogurt
1 bunch scallions, chopped (option)
Direction.
Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. When the water comes to a boil, add the spinach and blanch for 10 to 20 seconds. Transfer to the ice water, cool for a minute, then drain and squeeze dry. Chop coarsely.
Place the garlic in a mortar and pestle with 1/2 teaspoon salt and mash to a paste (alternatively, finely mince). Combine with the lemon juice and olive oil, and let stand for 10 minutes. Stir in the yogurt.
In a medium bowl, combine the chopped spinach, dill, parsley and mint. Stir in the yogurt and garlic mixture, and the optional scallions. Add freshly ground pepper to taste and more salt if desired. Serve with bread, pita or raw vegetables.
4.Raspberry Chia Jam with Yogurt.
Ingredients
3⁄4 cup fresh raspberries, divided
1 Tbsp. honey
1 tsp. chia seeds
1 cup vanilla yogurt
1⁄4 cup granola
Direction:-
Step 1 :In a medium bowl, mash together 1⁄2 cup raspberries, honey, and chia seeds.
Step 2 :Place yogurt in a bowl. Top with raspberry-chia jam. Stir to swirl.
Step 3 :Top with granola and remaining raspberries.
5.Avocado Deviled Eggs.
INGREDIENTS:
2 slices bacon, diced
6 large eggs
1 avocado, halved, seeded and peeled
2 tablespoons chopped fresh cilantro leaves
1 tablespoon freshly squeezed lemon juice
Zest of 1 lemon
Kosher salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh chives
1/4 teaspoon cayenne pepper.
DIRECTIONS:
Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.
Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook for 1 minute. Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes.
Drain well and let cool before peeling and cutting the eggs in half lengthwise, reserving the yolks.
In a small bowl, mash the yolks and avocado with a fork until chunky. Stir in cilantro, lemon juice and lemon zest; season with salt and pepper, to taste.
Use a pastry bag fitted with decorative tip #1M to pipe into the eggs, topped with bacon and garnished with chives and cayenne pepper, if desired.
