Ingredients:
For the topping
1 tbsp vegan butter
3 cups mixed berries (frozen is fine)
1 cup monk fruit sweetener (1:1 White Sugar Substitute)
1 tsp vanilla extract
2 tbsp cornstarch
For the bread
2 bananas
1 tsp vanilla extract
1.25 cups almond milk
2 cups monk fruit sweetener (1:1 White Sugar Substitute)
2 cups self rising flour
1 tsp baking powder
1 tsp baking soda
Directions
Melt the butter in a cooking pot on medium heat then stir in the rest of the topping ingredients
Simmer for 5 minutes, set aside to rest at room temperature
Blend the bananas and vanilla extract in a food processor on medium speed then blend in the almond milk followed by the rest of the bread ingredients
Preheat oven to 350 degrees F
Grease your bread pans and pour the batter in
Bake for 35 minutes
Let the bread rest to room temperature then poke some holes in sporadically
Pour the berry topping on top of the bread and set in the refrigerator for 3 plus hours!
