Healthy South Indian Breakfast (Serves 5-6)

Vada Ingredients:
Urad dal – 200gm (soaked overnight)
Green chilies – 6-7 (depends on how spicy you want)
Onion – 2 medium sized
Baking Soda – 1 teaspoon (Eno can also be used instead)
Asafoetida (Hing) – 1/4 teaspoon
Curry Leaves – 10-12
Salt as per taste
Refined Oil for deep frying
P.S : Make sure paste of Dal is fine not coarse.
After beating the batter thoroughly, dip a little batter in room temperature water to check its fluffiness. If it floats batter is well formed and ready or else we need to beat it further.
Instead of shaping the vada in my hand, I have used a small bowl covered it with wet cotton/muslin cloth tightly using a rubberband at the bottom so that the cloth doesnt move.

Sambar Ingredients:
Toor Dal – 200gm (soaked for 2 hours)
Drumstick (Sajan ki fali) – 2
Onion – 2 medium sized
Tomato – 2 medium sized
Brinjal (baingan) – 1 medium sized
Tumeric powder (Haldi) – 1 Tablespoon
Vegetables as per availability – Bottleguard (Lauki) / Pumpkin(sitafal) / Raw Papaya (kaccha papita)
Mustard Oil – 3 tablespoon
Everest Sambar Masala – 2 heaped tablespoon
Red chilli powder- 1 teaspoon or asspicy as you want
Tamarind (Imli) – as per taste
Salt as per taste
P.S : Everest Sambar masala is sour enough hence we did not use Imli but if you want you can add it just before tadka

Sambar Tadka Ingredients:
Mustard oil – 2 tablespoon
Mustard seeds (Sarson) – 1 teaspoon
Asafoetida (Hing) – 1/4 teaspoon
Dried chillies (sukhi lal mirch) – 4-5
Curry Leaves – 10-12
