Summer is not over yet, which means we still have time to enjoy the taste of fresh vegetables and prepare them in a variety of ways.
For today’s recipe, I have chosen a super refreshing, light and quick pasta salad that takes about 20 minutes to prepare.
Today I’m using dmBio products to prepare this healthy and delicious recipe. Please remember that dmBio products come from controlled organic and sustainable production. These products will help you on your way to conscious and conscientious eating and in everyday preparation of healthy meals!

Ingredients:

400 g dmBio fusilli pasta
250 g chicken breasts, boiled and chopped into cubes
½ red onion, finely chopped
150 g cherry tomatoes, cut in half
3-4 tablespoons parsley, finely chopped
1 avocado, chopped
100 g dmBio organic corn
200 g mini mozzarella balls

Dressing:

3 tablespoons dmBio organic olive oil
1 teaspoon dmBio organic mustard
1 tablespoon dmBio organic balsamic vinegar
2 tablespoons dmBio organic Tuscany spread
1 teaspoon dmBio organic Italian seasoning
1 teaspoon dmBio seasoned salt
ground black pepper to taste

Firstly, put water in a saucepan and bring it to a boil. Add the fusilli to cook for about 7-8 minutes.
In the meantime, chop the boiled chicken breasts and place them in a bowl. Chop the red onion into small pieces; cut the cherry tomatoes in half; chop the avocado into small cubes and finally chop the parsley. Add all the ingredients to the same bowl. Add the mini mozzarella balls and corn, and stir until well combined.
When the pasta is ready, drain it, let it cool for 5 minutes and add to the bowl with all the other ingredients.
To prepare the dressing, add the olive oil, mustard, balsamic vinegar, Tuscany spread, Italian seasoning, seasoned salt, and ground black pepper in a bowl. Mix in with a fork or spoon until all the ingredients are combined and transfer the dressing to the bowl with the pasta and other ingredients. Mix it well and serve.
