Hi Friends, with my recent week of international cuisine trend I have yet another super recipe from the Mideast western region. Yes today I am going to share with you the secret recipe of making the perfect soft and fluffy bread at home. Yes true! You heard me right| Bread it is. And not just making it we will be doing it perfect that will make the store bought ones a shame. I have tweaked to make it more healthy as well by going wheat. I never thought I could or would but then here I am with the perfect foolproof recipe.
Bread by far if one of the oldest food in civilization and dates way back to over 30000 yrs ago. It’s the staple food for the Middleeast, African, European countries and their cultural spread countries like America and Australia. We all know Asian countries are more partial to Rice and noodles for their staple food. But the majority of the other countries depend on this loaf of delicious indulgence for their needs. There are numerous varieties for preparing bread ranging from the usual starch as it all traditionally started and then came the flour and then wheat and so on. Today with all the health consciousness in an upbeat we have wholemeal, multigrain, no flour varieties to add to the list of yummy versions. Besides the main ingredient of flour, water and oil/butter it also has flavourings and toppings that range from dried fruits, nuts, fruit pulps etc that makes it one of the versatile foods in most cuisines.
I was wondering why I had taken so long in trying out this super food with its rich lineage and use for all nature. Then it struck as me as a child and even since I started cooking I have never seen family or friends making bread at home and it was always considered a bakery affair and then these huge supermarkets. When I started on the trial for this for which I have Sarvesh to thank else I just might not have embarked on this strenuous but fruitful trial journey of the yummiest and softest wheat bread. I had for a change got a wheat bread instead of the usual milk and flour ones we are used at home and he just loved it. On my third order was actually having a slight blow to my maternal pride of him liking my foods better and thus came the urge to do it at home. It came out perfect, soft and so yummy that not only him but we and a few of my friends have lost the taste for the store bought ones anymore. Its that delicious, filling soft and fluffy. Hope all of you try and like it just as much.

Ingredients:
Dry ingredients:
Wheat flour : 3 cups
Granulated Sugar : 2 tbsp
Instant yeast : 1/2 tbsp
Salt : 1 tsp

Wet ingredients :
Vegetable /OliveOil : 2 tbsp
Raw Milk : 1 1/2 cup

Instructions:
• Take a large bowl and mix all the dry ingredients.
• Add the vegetable oil and milk and mix well.
• Once the dry and wet ingredients are combined well you have to start to knead.
• Transfer to a flat surface / board.
• Dust some wheat flour on the board before placing the dough.
• Now start to knead the dough by stretching and pressing alternately.
• Initially you will feel the stickiness but as you start kneading you can feel it becoming smooth.
• Keep kneading for about 20 mins and make a large ball.
• Now take a big bowl and place the dough ball.
• Apply some oil on top.
• Close with plate or cling wrap and allow to rest for about 1.5 hrs to 2 hours.
• After 2 hours remove the plate/cling wrap.
• Punch on the dough ball to release any air bubbles.
• Knead for about 5 mins again by placing on a flat surface.
• Make a rectangular shape as per the bread tray used and fold as shown.
• Apply on the loaf tray and place the dough.
• Press gently to fit the shape of the pan.
• Brush some oil on top and close with a big vessel /cling wrap and allow to rest for another 30 mins.
• After 30 mins you can remove the covering and notice it has fluffed up.
• Now brush some cold milk on top.
• Place in a pre heated oven at a temperature of 180 C/356 F for 30 to 35 mins.
• Once it turns brown in color brush a little butter on top when hot.
• Allow to cool down completely.
• Now scrape the edges using a spatula and tap to release the loaf from the tray.
• Cut and serve hot or cold with butter or jam or just like that.
• Healthy yummy and soft homemade eggless whole wheat bread ready to devour.

Tips:
• For kneading the dough you can use kneading machine or by hand as shown. This step is very important for the bread to be soft and fluffy.
• Dusting the wheat flour on the board helps the dough not stick to the surface.
• Can replace the milk with water for ½ cup.
• Applying oil on top of the dough while resting helps to keep it wet and get too dry.
• The butter applied when hot helps the crust remain soft.
