Chickpea Salad | Protein Salad Recipe

Ingredients:

Chickpea/white chana – 1 cup
Salt – 1tsp
Water – 2.5 cup

Garlic – 1tsp minced
Chilli powder – 1/2 tsp
Cumin powder – 1/2 tsp
Oregano – 1/2 tsp
Olive oil – 1tbsp

Onion – 1/2 cup chopped
Tomato – 1/2 cup chopped
Cucumber – 1/2 cup chopped
Red bell pepper – 1/2 cup chopped
Green bell pepper – 1/2 cup chopped
Carrot – 1/2 cupp grated
Coriander leaves – 1/2 cup chopped
Salt as needed

Olive oil – 3tbsp
Lemon juice – 2tbsp
Salt – 1/2 tsp
Pepper powder – 1/2 tsp
Honey/sugar – 2tbsp

Instructions:
1. Soak chickpea for 8 hr or overnight
2. Rinse and pressure-cook with enough water and salt for 4-5 whistles
3. Strain it and keep aside
4. Heat pan with olive oil. Saute minced garlic
5. Add cooked and strained chickpea. Then add chilli powder, cumin powder, oregano and salt
6. Saute well on medium heat until chickpea coated well with spices
7. Switch off the heat and keep aside to cool down
8. Prepare salad dressings. In a bowl mix olive oil, lemon juice, honey, pepper powder and salt
9. Prepare salad. In a large bowl add chopped vegetables like, onion, tomato, cucumber, peppers, carrots. Then and cooled chickpea and salad dressing
10. Combine everything and serve
