Salads are one of the oldest dishes in the world with variations of them ranging back thousands of years. In recent years, we’ve seen an influx of unique salad recipes set for different occasions.

This particular chicken salad recipe is designed to offer as many healthy nutrients as possible in the least amount of calories.

The salad is rich in everything from protein, healthy fats, and vitamins to fiber and antioxidants.

You can add other vegetables and ingredients according to your preferences too, if you want.

Ingredients:

For Chicken

– Chicken – 200 Grams (Cut in Small Pieces)
– Soy Sauce – 1 Tbsp
– Chili Sauce – 1 Tbsp
– Paprika Powder – 1 tsp
– Salt – 0.5 tsp
– Black Pepper – 0.5 tsp
– Olive Oil – 1 Tbsp
– Ginger Garlic Paste – 1 Tbsp

For Salad

– Potatoes – 200 Grams (Boiled)
– Carrots – 100 Grams (Boiled)
– Penne Pasta – 150 Grams (Boiled)
– White Chickpeas – 150 Grams (Boiled)
– Kidney Beans – 150 Grams (Boiled)
– Corn – 100 Grams (Boiled)
– Cabbage – 100 Grams (Cut)
– Capsicum – 100 Grams (Cut)
– Iceberg Lettuce – 300 Grams
– Cucumber – 150 Grams
– Olives – 20-25 Whole
– Spring Onion – 20 grams (Cut)
– Lemon Juice – 2 Tbsp
– Olive Oil – 2 Tbsp
– Black Pepper – 1 tsp
– White Pepper – 1 tsp
– Salt – 1 Tbsp
– Brown Sugar – 1 Tbsp (Optional)

Instructions:

1. Put 1 tsp paprika powder, 0.5 tsp black pepper, 0.5 tsp salt, and 1 Tbsp of soy sauce and chili sauce each in a bowl and mix it.
2. Then, add all the chicken pieces inside and mix them to properly marinate them. Leave it for 30 mins.
3. After that, take a pan and add 1 Tbsp of olive oil and ginger garlic paste and heat it on medium heat for 30 seconds.
4. Then, put the marinated chicken in the pan and cook it for 10 minutes.
5. After that, take a bowl and start adding the vegetables. Add 200 grams of boiled potatoes and 100 grams of boiled carrots.
6. Then, add 100 grams of boiled corn, 150 grams of boiled white chickpeas, and 150 grams of boiled penne pasta.
7. After that, add 100 grams of diced capsicum, 150 grams of boiled kidney beans, and 100 grams of diced cabbage.
8. Then, add 150 grams of diced cucumbers and 20-25 olives. (we’ve used 12 green and 12 black olives)
9. After that, add the cooked chicken pieces and 300 grams of iceberg lettuce (broken by hand) and mix it all.
10. When done, take a small bowl and add 2 Tbsp of lemon juice, 2 Tbsp olive oil, and 1 tsp of salt, black pepper, and white pepper and mix it well.
11. You can also add 1 Tbsp of brown sugar in the mixture.
12. Then, pour the mixture over your chicken salad and mix it well.
13. Your salad is ready to be plated up! Sprinkle around 20 grams of diced spring onions and you’re good to go! Enjoy!
