This quick and easy recipes are my go to when I have busy weeks.
They are always a hit when my friends try. I hope it becomes one of your favourite too
Ingredients
300g chicken breast
8 cloves of garlic diced
20g ginger
1 diced chili (yellow habanero chili)
3 sprigs of thyme (chopped)
1 tsp all-purpose/chicken seasoning
1 tsp wine/ apple cider vinegar
1 tsp lemon juice
3 tbsp olive oil
ÂĽ tsp smoked paprika
½ tsp dried mixed herbs
1 tsp Himalayan pink salt
Vegetable Salad Ingredients ( Use the quantities you desire and season to taste)
Broccoli
French (green) beans
shitaki mushrooms
sweet peppers
Bell peppers
Cucumber
Radishes
Olives
Cherry tomatoes
Pinch of Salt & peppercorns to taste
Vinaigrette Dressing Ingredients
1/2 cup orange juice
1/4 cup lemon juice
1 tsp whole grain mustard
1 tbsp extra virgin olive oil
1 tsp honey
1 tsp pepper
1/4 tsp pink Himalayan salt

• Chicken – Protein, tryptophan (tryptophan is a precursor to the neurotransmitter serotonin which is important in helping to promote the feeling of well-being
• Broccoli – B2 Riboflavin, soluble fibre, helps stimulate HC (Hydrochloric acid) production, calcium, Magnesium, protein, fat, chromium, anti-cancer fighting properties, antioxidants, etc
• Shitake mushrooms – Vitamin D, B2 riboflavin, B3 naicin, amylase, proteases, nucleotides, soluble fibre, etc
• French (green) beans – Vitamin A, C & K, folic acid, soluble fibre, antioxidants, flavonoids, etc
• Sweet peppers – Vitamin C, carotenoids, cellulose, soluble fibre, antioxidants, beta carotene
• Cucumber- Insoluble fibre, flavonoids, lignans, antioxidants, anti-inflammatory, and anti-cancer properties
• Olives – Vitamin E, antioxidants, healthy fats, anti-cancer fighting properties, oleic acid, palmitic acid, soluble fibre
• Cherry tomatoes – Vitamin C, antioxidants, anti-inflammatory and anti-cancer properties
