FALL MEAL PREP WITH ME | QUICK AND EASY MEALS // LoveLexyNicole

Items I used in today’s video
cutting board:
white casserole dish:
cast iron pan:
black sheet pan:
sheet pan liner:

Breakfast casserole recipe:
Ingredients
-1 pack of bacon
– 8 eggs
– Sharp cheddar cheese
-Green onion (optional)
-1 yellow onion chopped
– 1 bag of yellow baby potatoes
-Slice entire pack of bacon in small pieces and fry in pan until cooked. Drain grease and set aside
-Slice baby potatoes and yellow onion and sauté in olive oil until potatoes are browned not cooked. I season with salt and pepper
– chop up green onions
-Spray non stick spray on casserole dish
-Whisk 8 eggs and season with salt, pepper, and garlic
-Lay potato and veggie mixture and then bacon on top, toss.Pour egg mixture on top.
-Top with cheddar cheese
Bake 30-40 min on 375 degrees ( I cooked everything at 400 degrees but if just cooking casserole cook at 375 degrees)
Allow time to cool and then top with green onion for garnish !
Chicken (I used 2 pounds) :
-Season both sides of chicken with salt and pepper
– In a small bowl add 4 teaspoons of cumin, turmeric, Italian seasoning. Feel free to make less if you aren’t using as much chicken. Press seasoning in chicken. Make sure to season both sides.
– Add avocado oil to a cast iron pan on medium heat and cook both sides of chicken until crispy and browned (about 3-4 minutes per side).
– Transfer Cast iron pan to oven and cook until inside of chicken is cooked (about 5-12 minutes at 400 degrees) .
Enjoy!
Veggie Sheet pan
– 1 bag of brussel sprouts cut in half
– 1 bag of baby carrots
-1 large red onion chopped in large chunks
– Add carrots to sheet pan with olive oil and let it get a 5-10 minute head start. Then remove from oven and add rest of veggies and season with more olive oil, garlic salt, Italian seasoning, and vegetable seasoning.
-Cook for about 30 minutes until veggies are soft and slightly crispy at 400 degrees.
Rice Cooker Brown Rice:
2 Cups of washed brown rice
2 Cups of chicken bone broth and 2 cups of filtered water
Let rice cooker cook and enjoy!
