Hi guys,
in this video I´m showing you 4 different dinner ideas. All of them are easy to cook and healthy. I would love to know if you´ve tried one of these out! Let me know in the comments below!
RECIPES:
Tortellini pan:
– 1 pack tortellinis
– 1 leek stick
– 7 oz mushrooms
– 2 garlic cloves
– 1/2 broccoli (I used the whole broccoli)
– 7 oz green beans
– 10 grape tomatoes
– 1 cup heavy cream (or a vegan alternative)
– some corn starch
– vegetable broth powder, butter, salt, pepper, chilli powder
– parmesan cheese
Cook the tortellinis in water. Wash & cut the mushrooms, the leek, the broccoli, the green beans & the garlic. Cook the green beans for 8 minutes, then put in the broccoli & cook for 4 more minutes. Heat up some butter in a pan, sauté the mushroom, leek & garlic. Then season with some salt, pepper, chilli powder & vegetable broth powder. Put in the heavy cream, maybe thicken it with some corn starch. Stir in the tortellini, green beans, broccoli & halved tomatoes. Sprinkle some parmesan cheese on top.
Creamy chicken & wild rice soup:
French bread baguette pizza:
– 1 french bread baguette, to bake up in the oven
– 1 pack of frozen vegetables
– mozzarella cheese
Prepare the frozen vegetables according to the package. Cut the baguette. Put the veggies on top of the baguette & top with mozzarella cheese slices. Put it in the oven on 400° F. for 10 minutes or until the cheese is melted & slightly browned.
Quinoa patties with salad & garlic sour cream dip:
– 1 cup (250ml) vegetable broth
– 3/4 cup (125g) quinoa
– 1 small zucchini
– 1 big carrot
– 1 clove of garlic
– 8 oz (250g) sour cream
– 2 tsp corn starch + 8 tsp water
– 6 Tbsp bread crumbs
– 1 tsp turmeric, seasoned salt, salt, pepper, oil
Cook the quinoa in the broth, according to the package & cool it. Peel the carrot & grate the carrot & the zucchini. Peel and chop the garlic & mix it with the sour cream & seasoned salt. Dissolve the corn starch in the water.
Mix quinoa, zucchini, carrot, bread crumbs, cornstarch-water mixture & turmeric and season with salt & pepper. Shape 6-8 patties & fry them in a pan with some oil. Serve them with the dip & a green salad.
