Healthy Guacamole recipe:
1 avocado
1 lime
1/4 bell pepper
1/4 onion
Scallions
Cilantro
2 tsp salt
Mash avocado with fork. Squeeze out lime juice. Finely chop bell pepper, onion and herbs. Mix all ingredients together and add salt. Serve with your favorite corn chips.
Avocado Open Sandwiches
Mash one avocado and mix with chopped cilantro. Spread over a slice of bread. Sprinkle feta crumbles on top. Add halved cherry tomatoes, and dress with 2-3 cilantro leaves.
