Check out this month’s Healthy Cooking with Marcia. This month we have a delicious apple crumble that is super easy to make.

Ingredients:
3 cups apples (I diced roughly and I left the skins on! You can use fresh or frozen, if frozen, thaw 1st)
…..the best apples for baking tend to be slightly more tangy and firm: Granny Smith, Gala, Golden Delicious
Splash of lemon juice
½ -1 teaspoon ground cinnamon , to taste (or ¼-½ teaspoon ground dried ginger)
½ cup old-fashioned (rolled) oats
½ cup white whole-wheat flour
â…“ cup brown sugar
3 tablespoons unsalted butter, softened

Directions:
1. Preheat the oven to 375°F.
2. Spray an 8×8-inch baking pan lightly with nonstick spray. Set aside.
3. In a medium mixing bowl, stir together the diced apples, a splash of lemon juice, and cinnamon.
4. Spread the mixture into the bottom of the prepared baking pan.
5. In a separate small mixing bowl, add the oats, flour, sugar, butter, and cinnamon. Mix with a fork or pastry blender until the mixture is combined and crumbly.
6. Sprinkle the oat mixture over the apple mixture.
7. Place the baking dish in the preheated oven and cook until the oat topping is lightly browned and crispy, about 25-30 minutes.
8. Remove the pan from the oven and let cool at room temperature for at least 20 minutes before serving.

Recipe Notes • Store leftovers in the refrigerator. This recipe will work well with other fruits such as blueberries, pears, cherries, peaches, or mixed berries. The original recipe called for blueberries, and ½ of the cinnamon was replaced with ginger! The recipe would work well with Splenda™ Brown Sugar Blend or other brown sugar/low calorie sweetener blend. And, this recipe doesn’t make very much and it’s really popular; you might consider doubling the recipe…
Recipe yields about 6 small servings- about 2/3 cup.
