INGREDIENTS (serves 2)
Salad:
★ 1 tin of tuna, drained
★ 1 medium carrot, peeled
★ 1/2 radicchio, sliced
★ 4 Gem lettuce leaves, sliced
★ Handful of rocket leaves
★ 1 spring onion, sliced
★ 1 avocado, peeled and cut into small pieces
Dressing:
★ Handful of chopped chives
★ 10 capers, finely chopped
★ Juice of 1/2 a lemon
★ 3 tbsp Extra-Virgin olive oil
★ 1 tsp Dijon mustard
★ Dill for garnish
