Uttapam is a delicious South Indian breakfast recipe similar to thick pancakes made with fermented rice batter. In this recipe, I’m not using Rice Batter.

Ingredients:
1 1/2 cups whole wheat flour
1/4 tsp baking soda
1/2 tsp salt
1/2 cup grated carrot
1/4 cup spring onion, finely chopped
1 green chilli, finely chopped
Coriander
Oil
Method:
Add wheat flour, baking soda and salt to a large bowl.
Mix all the dry ingredients well.
Now, add grated carrot, spring onion, green chilli, coriander, and mix well.
Add one cup of water and mix, then add the rest water little by little and blend till smooth.
Cover the batter and allow the batter to rest for 10 to 15 minutes.
Heat up a nonstick pan and reduce the heat to low.
Pour the batter with a ladle and gently spread the batter to a thick pancake.
Increase the heat and cook that on medium heat.
Drizzle some oil on the top of the Uttapam and continue to cook until the base is golden.
When the base becomes golden and crisp, gently flip and cook the other side.
Serve Uttapam hot with coconut chutney and sambar.
