18 to 21 Patra Leaves (this will make 3 rolls)

*Batter Ingredients*
1 cup Besan
1/4 tsp Haldi
1 tsp Kashmiri Red Chilli Powder
1/2 tsp Jeera Powder
1/2 tsp Crushed Saunf
1/4 tsp Baking Soda
A pinch of Hing
Some Salt

2/3 cup water
1/3 cup Jaggery
1 tsp Ginger & Green Chilly Paste
3 to 4 tbsp Tamarind Juice

For Tadka
2 tsp Oil
1/2 tsp Mustard Seeds
1 tsp Sesame seeds

Coriander & Grated Coconut for Garnish

– Cleaning of the Patra leaves is very important in this recipe & removing the thick veins
– Roll it very tightly & compactly
– Spread the besan batter well and cover the full leaf
– Cut the roll only after it has been properly cooled. Post coming to room temperature – You can place it in the freezer for 10 mins
– Patra can be frozen upto 3 months
