• TRIPLE BEAN SALAD •
1 can black beans
1 can black-eyed peas
1 can small red kidney beans
½ chopped red onion
2 celery stalks, chopped
parsley to taste
salt/pepper to taste
3 tbsp red wine vinegar
6 tbsp extra virgin olive oil
• EASY BUFFALO CHICKEN SALAD •
• 1 Rotisserie Chicken, remove skin and shred
• 2 tbsp Frank’s Red Hot Original
• 1/3 cup plain nonfat Greek Yogurt
• 2 stalks celery
• 1/2 cup carrots
• 2 scallions
• salt/pepper to taste
• TURKEY ROLL-UPS •
(makes 3-4 “sushi” cuts)
• 2 slices turkey deli-meat/coldcuts
• 1/2 tbsp plain non-fat greek yogurt
• 1 slice provolone cheese
• 1 piece multi-grain bread
