Welcome back to the Holistic Kitchen. In today’s video Im making this delicious Roasted Butternut Squash & Spinach Risotto. This is only 352 Kcals per portion, making it filling and light.

Serves 3 People
You will need:
180g Carnaroli Rice
350g Butternut Squash
Handfull Spinach
1/2 Tbsp Olive Oil
100g Onion
2 tsp Parmesan Cheese
1.5 pt Vegetable stock
To make:
1)Peel and dice the squash and roast at 180 C for 20-30 mins
2)Meanwhile, dice the onion and soften in a pan with the oil.
3)Add the rice to the onions and stir over the heat for a minute.
4) Add the stock a little at a time, only adding more when the rice has absorbed the stock.
5) once the rice is tender, turn off the heat and add the shredded spinach. Sit for a minute or two until the spinach has wilted.
6) Plate the risotto and sprinkle with parmesan cheese.
