Pumpkin Bread Recipe with Chef Gautam Mehrishi
PUMPKIN BREAD
Pumpkin bread is a type of moist quick bread made with pumpkin. The pumpkin can be cooked and softened before being used or simply baked with the bread; using canned pumpkin renders it a simpler dish to prepare. Additional ingredients include nuts (such as walnuts) and raisins.
Pumpkin bread is usually baked in a rectangular loaf pan and is often made in late fall when fresh pumpkins are available. It can also be made from canned pumpkin, resulting in a stronger pumpkin taste.
PUMPKIN BREAD
• In Big Bowl Add
1½ cup Maize Flour
½ cup Refined Flour
3-4 tbsp Olive Oil
Mix well
• Then Add-
2 tsp Crushed Cloves
2 tsp Fennel &
Cardamom Powder
2 tsp Cinnamon Powder
2 tsp Nutmeg Powder
3 tsp Rock Salt
4 tbsp Pumpkin Puree
½ cup Dark Chocolate
Mix well
• In Same Bowl Add-
1/2 cup Soy Milk
1 cup Roasted Walnut
1 tsp Desi Ghee
Mix well and make dough
• Grease baking dish with Desi ghee and add dough.
Bake in preheated oven at 170°C – 180°C for 18 to 22 minutes
• For Presentation:
Cut bread in slices and
place in plate.
Mix ½/2 cup Honey,
1½ tbsp Nutmeg Powder,
1 tbsp Clove Powder
in small bowl and garnish
• Pumpkin Bread is ready to serve.
