Anglo Indian style Chicken Stew, slow cooked with chunks of carrots, peas, cauliflower, potato .. infact you can choose to add any veggies of your choice such a radish, turnips etc .. this is a recipe that is made in most Anglo Indian households(including mine)especially during winters due to the availability of all the veggies that go into this dish. It’s healthy and delicious. The addition of coconut milk makes it more creamy but that’s optional. The dish is made soupy so you can choose to have it with bread, rice or just the way it is. This is my version of this wonderful recipe, hope you like it 😊
Chicken Stew recipe |Anglo Indian style Chicken stew | Healthy and delicious
Ingredients
-Chicken – 400 gms
-Oil – 4 tbsp
-Cloves – 5
-Cinnamon- 1
-Cardamom- 3
-Peppercorns – 1/2 tsp
-Pepper powder – 1/2 tsp
-Ginger – 2 tbsp finely minced
-Onion – 2, medium chopped
-Carrots – Half chopped big
-Beans – handful chopped
-Peas- 1/2 cup
-Potato – 1 chopped
-Pumpkin(bottle gourd) – 3-4 large pieces
-Cauliflower – 3-4 florets
-Salt as per taste
-Water – 1.5 cups
-Coconut milk – 1/2 cup (optional)
Method
-Heat pan, add oil, cloves, cinnamon, cardamom, peppercorns, sauté few seconds , add onions and fry till light brown.
-Add chicken and ginger and fry till brown.
-Add carrots, beans, potato, cauliflower, pumpkin and peas and fry 3-4 mins
-Add salt , pepper powder, mix well.
-Add water and once it comes to a boil , cover and cook on med – low heat for 15-29 mins till well cooked.
-Add coconut milk and simmer for a few mins.
-Serve hot with bread, rice or just the way it is. You can adjust adding water as per your preference of gravy.
