Ingridients:
84g lite Mexican cheese
18 street taco corn tortillas (264g)
-egg whites (552g)
-sirloin steak tips (12oz)
-green salsa or salsa of your choice
Air fry tortillas at 370 for 15 minutes flipping 3 times in between.
While you’re doing this cook your steak to medium or medium well (or however you like your steak)
Cook eggs in medium heat and as soon as eggs hit the pan, dump air fried tortillas into the eggs and mix together.
Once cooked, place in casserole dish and add steak on top.
After that add cheese on top of steak.
Place casserole into the oven preheated at 350 for 10 minutes so cheese can melt.
Take out…. plate… then add salsa of choice on top!
Sprinkle some lite feta cheese to substitute for quest fresco and some lite sour cream for enhanced flavors!

With fried tortillas below whole eggs and full fat cheese and high fat steak, we dive into my kitchen to make some key substitutions while not sacrificing much of the flavor.
