Medu Vada is a famous South India breakfast dish which is deep fried, but this recipe provides you with a healthier version as these vadas are baked. So, here’s a shoutout to all the health-conscious people, do give this recipe a try & let us know in the comments section below. Happy eating!

Ingredients:

1 ½ cup Urad Dal, soaked
1 Green Chilli
1 inch Ginger
5-6 Ice Cubes
Salt as per taste
1 tsp Black Pepper
A pinch of Baking Soda
1 tsp Baking Powder
1 cup Onion, finely chopped
1 tbsp Coriander, chopped

Recipe:

Soak the urad dal for 30 minutes (no longer)
In a mixer blender add soaked dal, ginger, green chili and few ice cubes. Blend it well and make a thick paste.
Transfer this paste into a mixing bowl, add chopped onions, salt, black pepper powder, baking powder, baking soda & give it a good mix. (Tip: take a bowl of water and drop a small ball of batter into it, if it floats then the consistency of the batter is perfect)
Place a parchment paper on the baking tray, apply coconut oil.
Now apply little water on your fingers and take a small portion of batter and place it at equal distance on the baking tray.
Make a hole, with the help of your finger to give it the shape of a medu vada.
Now brush the vada with coconut oil.
In a pre-heated oven bake the vadas at 180C for around 20 minutes (15 mins one side and 5 min on the other side).
Serve with coconut chutney.
