🔥🔥🔥 Buffalo Chicken Salad⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS
• Dressing
½ cup low fat plain Greek yogurt
4 tablespoons hot sauce
2 tablespoons low fat mayonnaise
1 tablespoon lemon juice
1 tablespoon finely chopped chives or parsley
¾ teaspoon onion powder
½ teaspoon dried dill
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon black pepper
•Chicken Salad
4 cups shredded cooked chicken breast
1 head Boston Bib or iceberg lettuce (about 16 leaves)
2 stalks celery thinly sliced
1 cup shredded red cabbage
1 cup shredded carrots
INSTRUCTIONS
In a large bowl, combine all the dressing ingredients and stir until well incorporated. Set ¼ cup of the dressing aside in a small serving bowl.
Add the shredded chicken on top of the dressing and stir well to combine.
Fill the lettuce cups with 3-4 tablespoons of the chicken salad mixture. Top with celery, cabbage and carrots, as desired. Serve with the remaining dressing on the side for drizzling.
🔥🔥🔥Corn tomato avocado salad
INGREDIENTS
1 cup romaine lettuce, chopped (optional)
2 ears corn, or about 1 ½ cups
1 pint cherry tomatoes, halved
1 avocado, diced into 1/2-inch pieces
2 tablespoons finely diced red onion
2 tablespoons olive oil
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
INSTRUCTIONS
1. Combine the corn, avocado, tomatoes and onion. In a large glass bowl, mix together the dressing ingredients in a glass bowl. Pour over the salad and toss gently to mix.
🔥🔥🔥Shrimp and avocado salad
INGREDIENTS
3 tbsp extra-virgin olive oil
3 tbsp fresh-squeezed lime juice
1 tsp ground cumin
1/2 tsp sea salt
Fresh cracked pepper
1 lb. cooked jumbo frozen shrimp thawed, drained and patted dry with paper towel
2 avocados diced
1/4 cup small diced red onions
1 Tbsp fresh chopped cilantro
INSTRUCTIONS
1. In a bowl large enough to hold all the ingredients, whisk together the olive oil, lime juice, cumin and salt
2. Add the shrimp, avocados and red onions and gently combine with the dressing in the bowl.
3. Sprinkle fresh cilantro on top and give it another gentle toss.
4. Adjust salt and pepper to taste.
5. Enjoy immediately or chill in the fridge and enjoy cold.
