Turkey And Tomato Curry
You will make this in no time!
Preparation time: 10 minutes Cooking time: 20 minutes Servings: 4
Ingredients:
18 ounces turkey meat, minced
3 ounces spinach
20 ounces canned tomatoes, chopped
2 tablespoons coconut oil
2 tablespoons coconut cream
2 garlic cloves, minced
2 yellow onions, sliced
1 tablespoon coriander, ground
2 tablespoons ginger, grated
1 tablespoons turmeric
1 tablespoon cumin, ground
Salt and black pepper to the taste
2 tablespoons chili powder
Directions:
1. Heat up a pan with the coconut oil over medium heat, add
onion, stir and cook for 5 minutes.
2. Add ginger and garlic, stir and cook for 1 minute.
3. Add tomatoes, salt, pepper, coriander, cumin, turmeric and
chili powder and stir.
4. Add coconut cream, stir and cook for 10 minutes.
5. Blend using an immersion blender and mix with spinach and
turkey meat.
6. Bring to a simmer, cook for 15 minutes more and serve.
