Recipe for one loaf of bread:
Yeast
2.5 Cups of spelt flour
1 cup of Kamut flour
4 tablespoons of flaxmeal
2 teaspoons of Celtic sea salt or another variety of sea salt

2 teaspoons of honey
2 teaspoons of blackstrap molasses
1.5 cups of water

Prepare yeast: Mix one packet of active dry yeast into a quarter cup of warm water, stir in a teaspoon of honey. Mix together really well and set aside for 10 minutes.

While waiting for the yeast , add dry ingredients to your bowl. Stir the dry ingredients together and push the dry ingredients to the edge of the bowl to make a hole in the middle( You shouldn’t see the bottom of the bowl) .Add your honey and blackstrap molasses and pour the yeast mixture on top. Mix it all into the dry ingredients and then add 1 cup of the water to start and mix it in with the spoon. Add the last half cup of water, mix it and then start kneading the dough with your hand.
Knead the dough for about 4 minutes until it all comes together and forms a nice gummy texture. Then cover the dough for one hour to rise. After the hour knead the dough again. You can cover and let it rise again for a finer texture or you can transfer to your baking pan. Once the dough is in your baking pan , allow to rise for an hour or until doubled in size.
Preheat your oven to 350F after you have placed your bread in the pan. Once the dough has risen in the pan , place into the oven for 30 mins. After 30 mins turn the oven down to 200 F and bake for another 20 mins. Remove from the oven and allow the bread to sweat it out for about 5 mins in the pan, then use a butter knife to remove the bread from the pan. Place the bread on its side and allow to cool for 5 mins on a towel, then move to a cooling rack. Once completely cooled down , cover the bread and allow to sit for at least 48 hours. This allows the yeast to die completely.
Once the bread is ready to eat it can be sliced up and placed in the oven at a low temperature of 150 F to dry out. Allow the bread to dry out completely. This preserves the bread and is a very nourishing way to consume bread. If you heat the bread up again before eating , it will be just like new. Another option for preserving the bread is slicing it up, placing it into ziplock bags and storing it in the fridge or the freezer.
