In today’s video I’m sharing what my kids eat in a day including some easy healthy family meals. Recipes below 🙂

DF pikelets:
1 egg
1/8th cup (about 2 tbsp) sugar
1 cup flour of choice
1 tsp baking powder
3/4 cup plant milk (we used calcium-fortified almond milk)
Pinch salt.

Whisk egg and sugar until combined. Add remaining ingredients and mix until just combined. Cook over low heat until bubbles form, flip and cook until cooked through.

Blue HNK pancakes:
1 ripe banana
2 large eggs
1/4 cup milk of choice
1/3 cup buckwheat flour
1 tsp baking powder
1 handful spinach
1 tsp blue spirulina (optional)

Blend banana, eggs, milk and spinach until smooth. Add remaining ingredients and stir until just combined. Cook over low heat until bubbles form, flip and cook until cooked through.
