Makes 4 servings :
Salad :
• 5 spring onions finely chopped
• 1 medium cucumber roughly chopped
• 1/2 head small white cabbage finely chopped
• 1 big handful fresh chives finely chopped
• 1 avocado roughly chopped
Dressing :
• 2 garlic cloves
• 1 small shallot
• 1 handful fresh chives
• 1 big handful fresh spinach
• 1 big handful fresh basil
• juice or one lemon
• 1 handful of walnuts
• 1 handful of cashews
• 1/4 cup olive oil or avocado oil
• 1/4 cup nutritional yeast
• big pinch of salt
• 1 big handful chia seeds
Method :
• chop all the salad ingredients , add to a large salad bowl ( keep the avocado to add last )
• Blend the salad dressing ingredients until smooth ( except the chia seeds )
• Pour the dressing over the salad , toss well then add the avocado and the chia seeds & give it one last toss!
