Today I’m showing you an easy vegan recipe that is great for weight loss and one that you can eat during your Thanksgiving holiday, and not feel guilty about. This vegan meal falls in line with The Starch Solution and has helped me lose 45 lbs in 10 months, easily. For me, it’s not Thanksgiving without a good vegan, plant based stuffing and when it is great for weight loss, well I want to jump for joy! Eating a clean, vegan, plant based lifestyle is still possible during Thanksgiving and will allow you to continue on your health and weight loss journey.

Recipe for the Stuffing:
1 loaf of ezekiel bread, or any sprouted grain, or whole wheat bread
1.5 c red onion
1.5 c chopped celery
1.5 c chopped mushrooms
3 minced garlic cloves
1 TBSP low sodium soy sauce
1/4 tsp salt and pepper
1 tsp Sage and Thyme
1-2 c of cooked quinoa
– Cut your bread into little cubes, place on a non stick baking sheet and toast in the over for 15 minutes at 350 degrees.
– While the bread is toasting, chop veggies and saute in veggie broth. Add seasoning.
– Once bread os toasted, place in a large bowl.
– Add two cups of veggie broth to the bowl, and sauted veggie and stir well. If mixture is too dry, add more broth. If mixture is too wet, it’s okay. The liquid will absorb into the quinoa when we add it.
– Add one c of cooked quinoa (two if you want more)
* note when you add quinoa and more veggie broth, you will have to add more seasoning. SO just add more of the amounts above, or until it taste like you want it to.
_ Once mixed well, place in a baking pan (non stick) and bake at 375 degree for 30 minutes. Cover with foil for 20/25 minutes. For the remaining 5 or 10 minutes, take foil off and let the stuffing get a little brown.
– Serve with vegan gravy and enjoy!
