Blackberry Cobbler Ingredients:
-BLACKBERRY COBBLER FLLING-
2 containers of blackberries (or whatever berries of your choice)
2 teaspoons of lemon juice
½ teaspoon of vanilla extract
1/3 cup of keto friendly sweetener
1 tablespoon of cinnamon
1 teaspoon of xanthum gum
-BLACKBERRY COBBLER CRUST-
¼ cup of chopped walnuts
1 cup of almond flour
¼ cup of keto sweetner
½ cup of unsweetened coconut flakes
¼ cup of melted dairy free butter
~Preheat the oven to 350 degrees. Mix all the blackberry cobbler filling ingredients together. Put the blackberry cobbler filling in a buttered dish. I used Country Crock’s Plant Butter. Leave in oven for 10 minutes. While the blackberry cobbler filling is in the oven, work on the blackberry cobbler crust. After mixing all the ingredients for the crust, the timer should have gone off for the filling. Sprinkle the crust on top of the filling. Place dish back in oven for 30 minutes. When the timer goes off, wait AT LEAST 5 minutes before eating or adding your topping. My ice cream of choice for this recipe is the So Delicious Dairy Free No Sugar Added CoconutMilk Vanilla Bean.
