Healthy Low Calorie Tomato Soup || Homemade Tomato Soup
This is a simple, healthy and #easytospin 3-ingredients vegan recipe from #workingparents kitchen.
Our primary goal is to #cookmealsathome, with #healthyoptions that kids would love to eat.
Total Servings: 4 large bowls
Main Ingredients:
– 4 large organic carrots
– 4 large organic tomatoes
– 2 1/2 cup fresh or organic coconut milk
Spices:
– 2 tsp himalayan salt (or #pinksalt)
– 1 tsp turmeric powder
– 1 tsp dry basil powder (or 1/4 cup fresh basil leaves)
– 1/2 inch ginger root
Cooking Utensils:
– Cooker (or pan for boiling)
– High speed blender
Cooking (20-30 mins):
– Wash carrots & tomatoes
– Peel carrots & cut into halves
– Cut tomatoes into large pieces
– Add 2.5 cups of coconut water in the cooker, mix all ingredients and pressure cook for 10-15 mins (2 whistles max)
– If you are using a pan, bring the ingredients to a boil & cook on medium heat for 20-30 mins
– Once done, keep aside & let it cool
– Now, blend the cool mixture well in a high speed blender
– Sieve the mixture to remove all seeds (they r no fun)
– Server hot, as a side or evening snack
– (Optional) top with 1 tsp honey or bread croutons
– This recipe makes 4 large bowls
