This Surat special green pav bhaji is loaded with goodness of green veggies & spinach. It’s a healthy take on our regular pav bhaji, so do try this new twist at home & do let us know in the comments section below.

Ingredients:
1 cup Onions, finely chopped
1 cup Capsicum, finely chopped
1 cup Cabbage, finely chopped
1 cup Green Peas, boiled
1 cup Potatoes, boiled & mashed
1 cup Green Tomato puree
3 tbsp Pav Bhaji Masala
Salt to taste
¼ tsp Turmeric
2-3 tbsp Butter
2-3 tbsp Oil
200 gm Spinach Leaves
2-3 Green Chillies, finely chopped
5-6 pcs Garlic, finely chopped
1 inch Ginger, grated
Fresh Coriander Leaves, garnish

Recipe:
In a vessel, add some water, salt & bring it to boil. Now add spinach blanch it for 2-3 mins.
Once done drain the excess water & add the blanched spinach leaves into ice cold water.
In a mixer blender, add blanched spinach leaves, ginger, garlic, green chillies and little water. Grind it to form a smooth puree. Keep it aside.
In a pan heat butter & oil. Now add chopped onions & fry until golden brown.
Now add capsicum, cabbage sauté it & cook for another 2-3 mins.
Next add tomato puree, salt, turmeric powder and pav bhaji masala. Cover with the lid and cook for 7-8 mins.
Now add green peas, mashed potatoes and cook for a while. Now add spinach puree and mix well.
With the help of hand masher, mash it well (add some water if required). Now add little more pav bhaji masala & cook for more 4-5 mins. Add extra butter for garnish with coriander leaves.
In a separate pan, add some butter, red chilli powder, green coriander leaves & place the slit pav on it and roast it on both the sides until bit crispy.
