Beet is an ingredient few people use (probably because it stains pretty much EVERYTHING!) But it is associated with numerous health benefits as it is packed with essential nutrients. In France, you usually find beet already cooked. When I moved to the US, I was amazed to learn that you can actually eat beet raw. Guess what… IT IS DELICIOUS!

This recipe is one of my favorites. It is fresh and earthy, and it contains other super healthy ingredients like kale, lemon, and honey. So good for you!

You will enjoy every bite of this salad. And if you want to be adventurous and you like goat cheese, feel free to add a couple slices to this recipe.

Ingredients

1 large green apple
3 to 4 raw beets
A handful of fresh kale
1 small onion
The zest of 1 lemon
Hard boiled eggs

For the dressing:

1 Tbsp Dijon mustard
The juice of 1 lemon separated in half
3 Tbsp red wine vinegar
1/4 cup olive oil
1 Tbsp honey
Salt and pepper to taste

Instructions

1 – Peel and cut the apple into strips.

2 – Slice the onion.

3 – Wash, peel and roughly cut the beets into pieces. Put the pieces in a food processor and chop or shred to desired consistency. Transfer to a large bowl.

4 – Add the lemon zest, onion and apple to the beets and stir to combine.

5 – Add the kale.

6 – In a small bowl, make the dressing by whisking together the mustard, red wine vinegar, olive oil, honey, half of the lemon juice, salt and pepper. Drizzle on salad. Stir.

7 – Add sliced or diced hard boiled eggs to the salad. Drizzle the other half of the lemon juice.
