Title: RICE VERMICELLI WITH FRESH HERBS SALAD

⌛️PREPARATION TIME: 15 minutes

✅ INGREDIENTS

150g rice vermicelli
6 pack choi leaves, torn into bite-size pieces
1 handful cilantro leaves
1 handful mint leaves
1 handful Thai basil leaves
200g peeled, seeded, and julienned cucumber
90 soybean sprouts
80g grated carrots
1 tbsp sesame oil
2 tbsp fish sauce

✅ METHOD

– Cook the noodles according to the instructions on the packaging.
– Rinse in cool water until the water runs clear and the noodles are cooled; drain well.
– Mix the pack choi, carrots and cucumber together and season with sesame oil.
– Place the noodles into serving bowls and top with seasoned vegetables.
– Mix the herbs together and garnish the bowl with this mix.
– Season with 1tbsp of fish sauce each and serve with other Asian sauces to taste.
