IRISH BROWN BREAD
Preheat oven to 400 degrees F.
2 cups whole-wheat flour
1 1/2 cup all-purpose flour, plus extra for kneading and dusting
1/2 cup wheat germ
2 teaspoons baking soda
1/4 teaspoon kosher salt
2 cups buttermilk
1 egg, lightly beaten
1. In a large bowl add all dry ingredients. Whisk together until well blended. Mixture together buttermilk and egg. Slowly add buttermilk mixture to dry ingredients. Stir just until moistened.
2. Turn the dough onto a generously floured work surface. Gently knead dough 8-10 times…dough will be sticky. Shape dough into a 7-inch ball and transfer to baking sheet.
3. Lightly dust dough with flour. Cut a 4-inch X into the top of the dough, cutting about 1/2-inch deep.
4. Bake until the bread splits open at the X and makes a hollow sound when the underside is tapped, about 30-35 minutes. Transfer to a wire rack and let cool for 2 hours (ideally) before slicing.
Makes 24 slices
