One pot meals for maximum weight loss following The Starch Solution is what I will be sharing with you today! I will be sharing 2 quick and easy one pot meals to help you lose weight and improve your health. These 2 one pot meal recipes can be made on the stove top or the Instant pot. Today I will be showing you the stove top method. Here is what you will need for these simple one pot meals.
Recipe 1
SWEET POTATO AND BLACK BEAN ONE POT MEAL
Ingredients:
1 can black beans rinsed and drained
1 sweet potato peeled and chopped
1 onion chopped
1 tsp. minced garlic
1 carrot chopped
2 celery stalks chopped
1 cup frozen roasted corn
1 tsp. garlic powder
1/2 tsp onion powder
1/2 tsp cumin
2-3 cups veggie broth(enough to cover veggies)
1 1/2 cup finely chopped baby kale
1/4 cup instant potato flakes(optional use only if you want it more stew like)
Instructions:
Add 2-3 T of water to a pot
add onion and garlic and saute on medium heat till onions are soft
Add the rest of the ingredients except beans, kale and potato flakes and stir well.
Bring to a boil the turn heat down and simmer until potatoes are soft.
Remove 1-2 cups and place in a blender, blend then add back into the pot. If your are using the potato flakes add now and stir well.
Then add beans and heat through for a few of minutes then turn off heat and add kale and stir will. Cover and let sit for a few minutes until kale wilts a bit.
Recipe 2
FIRE ROASTED VEGGIE ONE POT MEAL
Ingredients:
1 14.5 oz. can of fire roasted crushed tomatoes
1 16 oz. bag of frozen mixed veggies
1/2 cup chopped onion
1 tsp. minced garlic
1 cup veggie broth
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 cup chopped arugula
Instructions:
Add 2- 3 T of water to a pot.
Add onion and garlic and saute on medium heat until onions are soft.
Add the rest of the ingredients and bring to a boil and then turn heat down and cook until veggies are cooked through, then turn off heat add the arugula and let sit for 5 minutes until the arugula wilts.
