Here is my latest 5 healthy evening meal ideas and how I made them. All from Slimming World recipes books and online. Some healthy batch cooking too which is always a bonus!
MEAL IDEA NUMBER 1
CLASSIC CHICKEN CURRY – original recipe
CURRY HEAVEN SLIMMING WORLD RECIPE BOOK PAGE 46
800g skinless and boneless chicken thighs or breasts cut into large pieces
Salt and freshly ground black pepper
Low calorie cooking spray
1 onion, peeled and finely chopped
2cm piece root ginger, peeled and finely grated
2 garlic cloves, peeled and crushed
1 tbsp mild or medium curry powder
1 tsp each of ground cumin, ground coriander, ground cinnamon and paprika
Half a tsp crushed cardamom seeds and a quarter of a tsp of ground cloves and turmeric
400g can chopped tomatoes
300ml boiling chicken stock
Chopped coriander, sliced green chillies and fat free natural yogurt to serve
MEAL IDEA NUMBER 2
JACK DANIEL’S STEAK WITH SWEET POTATO FRIES – original recipe
SLIMMING WORLD ONLINE RECIPE
INGREDIENTS
4 lean sirloin steaks, visible fat removed
4 large portobello mushrooms
6 tomatoes, halved
200g green beans, trimmed, to serve
For the sweet potato fries
1 tsp sweet smoked paprika
1 tsp ground cinnamon
2 tsp dried mixed herbs
3 sweet potatoes, peeled and cut into thin fries
Low-calorie cooking spray
For the Jack Daniel’s glaze
4 tbsp dark soy sauce/tamari
4 tbsp tomato puree
1 tsp onion granules
1 tsp garlic granules
1 tbsp Jack Daniel’s or other bourbon whiskey

BOLOGNESE PASTA BAKE – original recipe
SLIMMING WORLD ONLINE RECIPE
400g dried pasta
1 onion, finely chopped
1 medium carrot, finely chopped
3 garlic cloves, finely sliced
250g mushrooms, roughly chopped
500g lean beef mince (5% fat or less)
400g can chopped tomatoes
250ml hot beef stock
1 tsp dried oregano
110g reduced-fat mozzarella, diced
Wilted spinach or green vegetables, to serve
MEAL IDEA NUMBER 4
PIRI-PIRI CHICKEN AND RICE – original recipe

300g cherry tomatoes, halved

Lemon wedges, to serve
For the Piri-Piri seasoning
1 tsp onion granules
1 tsp garlic granules
2 tsp ground coriander
2 tsp paprika
1 tsp dried oregano
1 tsp chilli powder
1 tsp ground cumin

1 beef stock cube
500g dried spaghetti
Fresh basil leaves, to serve
