Ingredients:
1 avocado
8 cherry tomatoes
2 scallion
1/2 tsp salt
1 tbsp lemon juice
Directions:
1. Chopp the scallions and cherry tomatoes. Cut the avocado, add it to a bowl.
2. Mash the avocado, add the tomatoes, scallion, salt, lemon juice, and mix with a fork.
3. Spread the avocado mixture on rice cakes or toast!
