Sourdough bread recipe:
100 g. Active starter
350 g. Water
10 g. Fine sea salt
500 g. Bread Flour
Combine flour and water. Let sit for 30 minutes so flour can absorb water. Add remaining ingredients and mix well. Let rest for 1 hour at room temp or on a warm stovetop. Perform 6 stretch and folds: 3- 15 minutes apart and 3- 30 minutes apart. Allow dough to sit, covered, and ferment till doubled (3-4 hrs). Gently pour dough on to a lightly floured surface. Let it rest for 15 minutes. Fold and shape dough. Place in floured banneton overnight.
In the morning: preheat dutch oven at 450° for 30 minutes. Place refrigerated read loaf on to a sheet of parchment paper. Score the top, and then lift the dough into your dutch oven and cover. Bake covered for 20-25 minutes. Remove lid and bake until golden, about 20-25 minutes.
