OAT FLOUR BREAD RECIPE
(makes 4 slices)
Ingredients:
3/4 cups ground oats, or oat flour (75g)
1 tbsp tapioca starch or cornstarch
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
2 egg whites
1 tsp olive oil
2 tbsp Greek yogurt, or sour cream
1 tbsp water
NUTRITIONAL INFO (per slice):
99 calories, fat 2.5g, carb 14.1g, protein 4.8g
Preparation:
In a bowl add all the dry ingredients, ground oats, tapioca starch, baking powder, baking soda and salt, and mix together.
In separate bowl add the egg whites, Greek yogurt, olive oil and water. Whisk well.
Pour the wet ingredients into the dry ingredients and gently fold in.
Grease your glass container or microwave safe bowl (I use 6 inch or 15cm square container) and pour in the batter.
Microwave on high for 1.5 – 2.5 mintues (depends on the power of your microwave).
Let it cool for 2 minutes, then transfer to a wire rack.
Slice diagonally and then horizontally, you’ll have 4 slices.
It’s great for making sandwiches, toast or grilled cheese.
