Monday:
Stewed Apples:
3-4 large apples
1 teaspoon cinnamon
1 tablespoon water
In a pot combine apples, cinnamon and water.
Heat over medium heat until water begins to boil.
Cover and reduce heat.
Cook for about 10-15 minutes, until apples are soft
*Keep an eye on the apples, just to make sure they do not burn! You may have to add a little bit of water as it cooks down.
Oats:
1/3 cup oats
1 teaspoon Cinnamon
2 tablespoon flax seeds
½ tablespoon maca powder
2 scoops of collagen powder
1/2 tablespoon coconut sugar or maple syrup
1/8 teaspoon salt
Maple Mustard Sauce:
½ tablespoon mustard
1 teaspoon maple syrup
1 tablespoon tahini
1/8 teaspoon salt
1/8 teaspoon smoked paprika
1-2 tablespoon water
Kichadi:
2 tablespoon coconut oil
3 bay leaves
½ tablespoon cumin
½ tablespoon coriander
1 teaspoon oregano
½ teaspoon turmeric
2 tablespoon fresh ginger, grated
½ cup brown rice
¼ cup mung beans (soaked for 3-4 hours)
3 cups water
2 pieces of Kombu, chopped
3-4 cups of vegetables of choice (I like to use carrots, broccoli, squash, cauliflower and leeks)
1 teaspoon salt.
Warm coconut oil in a large saucepan, add cumin, coriander, oregano and bay leaves, sauté lightly
Stir in the turmeric, ginger, rice, mung beans, water and kombu
Cover and simmer for 20 minutes
Wash and dice vegetables
Place vegetables on top of rice mixture and push down to immerse in water (do not stir the vegetables in)
Sprinkle salt over veggies
Cook for another 30 minutes

Chia Seep Pudding (2-3 servings)
1/3 cup chia seeds
1 and ½ cup plant milk
1 table spoon maca powder
2 table spoon maple syrup
¼ Teaspoon sea salt
Combine ingredients in a blender and blend until smooth
Refrigerate for at least 4 hours
