HONEY MUSTARD CHICKEN SANDWICH – honey mustard is the marinade that keeps on giving, so is this sandwich:

Ingredients
4 to 6 boneless chicken thighs, roughly pounded
2 heaping tablespoons mustard, can be Dijon, whole grain, etc
1 tablespoon honey (or sugar)
2 teaspoons vinegar, balsamic, white, wine, apple cider, etc
1 teaspoon kosher salt
1/2 teaspoon cayenne, optional
2 tablespoons olive oil, plus more as needed
2 garlic cloves, minced
Garlic Mayo
1 garlic clove, minced
1/8 cup finely chopped herbs
A pinch of salt
1/2 teaspoon freshly ground pepper
1/2 to 1 cup mayo
Instructions
1. Combine all marinade ingredients in a bowl add the chicken and marinade for at least 15 minutes before cooking.
2. Get a skillet nice and hot on medium heat. Drizzle 1 to 2 tablespoons of neutral oil and add the chicken, skin side down. Brown the meat until the skin is nice and caramelized, or for 6 to 8 minutes. Flip the meat and continue cooking for 4 to 6 more minutes. Flip again and cook for 1 to 3 more minutes. By now, the internal temperature should be over 165°F, but feel free to cook the chicken for longer, as needed.
3. Combine all garlic Mayo ingredients in a bowl. Spread it on 2 slices of toasted bread, add lettuce, a pinch of salt, grilled chicken and pickles.
