Not only is this sandwich, full of healthy protein and carbs, but it also has the perfect amount of fat – without going over board, and it’s satisfying and filling. Enjoy!

VIDEO RECIPE:
3 C chickpeas – smooshed
1/2 apple (Granny Smith works best)
1/3 C dried cranberries
1/4 c chopped pecans
Sauce – 6-8 TBSP PB2 cashew powder and water, or hummus or low fat vegan plain yogurt, 2 tsp lemon juice, 2 tsp dijon mustard, 1/4 tsp garlic powder, a pinch of salt. Mix well. Combine everything well and serve on sprouted bread or some type of grain bread. Enjoy!
