Honey Cashew Hazelnut Bread ( 2 breads recipe )

240Gr T65 Flour ( all purpose works as well, but with less water )
120Gr Wholemeal flour
40Gr Rye flour
8Gr Dry yeast (when fresh yeast; 24gr)
8Gr Salt
300Ml water
40Gr Honey
70Gr Cashews
70Gr Hazelnuts

-Soak nutmix in water for 15 minutes, take out of water and mix with honey.
-Mix dry ingredients with yeast before adding water (not needed when using fresh yeast).
-Add water, mix slow for 5 minutes / fast until dough temperature= 28 degrees and well developed!
-add nutmix and mix until they are properly divided into the dough.
-Put dough in bowl, cover up and let rest for 1 hour ( fold every 20 minutes )
-Divide dough in 2 breads, shape them into a pill and rest for 30 minutes.
-Shape pills into breads
-Let them proof for 1 hour ( covered and moist )
-Before baking, decorate with flour and cut!

-Bake on 220 degrees C, for 250-30 minutes ( use steam!)
-Decrease oven temperature to 200 degrees C while baking
