Join me in my kitchen as I make a Trim Healthy Mama friendly Peanut Butter Banana Chocolate Chip Quinoa Bread. It’s a great E breakfast.

INGREDIENTS:

5 C Cooked Quinoa (1 1/4 Dry, Pre-Rinsed, Soaked, Cooked and Cooled)
2/3 C Egg Whites
1/2 C Peanut Flour
1/4t THM Peanut Butter Extract (OPTIONAL)
3T-5T Super Sweet
1t Baobab Powder
1T Vanilla Extract
1/4t Banana Extract
1 Large Banana
3T THM Chocolate Chips (2T for batter, 1T reserved for top)

DIRECTIONS:

1) Add ingredients to the mixer in this order, mixing a small amount between additions: quinoa, egg whites, peanut flour, Super Sweet, Baobab powder, vanilla & banana extracts, banana (broken into 4ths), chocolate chips. After all ingredients are in mixer, mix until fully incorporated.

2)Lightly spray loaf pan with avocado or olive oil, and add mixture.

3) Bake at 350F for 10-15 minutes.

4) Remove from oven, and swirl/stir mixture to incorporate melted chocolate better, return to oven.

5)Bake at 350F for 30-35 more minutes (ready when knife inserted into the center comes out clean).

6)Cool at least 30minutes before cutting (this helps it to stay together better)
