HEALTHY PALAK / SPINACH SOUP

Palak soup

INGREDIENTS

Palak / spinach leaves – 3 cup or a small bunch [remove the stalk ,wash and drain]

Garlic chopped – 1 tbsp

Onion – 1 big chopped

Pepper powder – as per taste for serving

Butter –1 tbsp [or less]

Olive oil or regular oil -1/4 tsp

Milk – 1 cup

Corn flour – 1 tbsp

Salt – as per taste

2 cup Water –

Mixed herbs or oregano for serving

Amul fresh cream –for garnishing.

METHOD
Take a pan and heat butter + oil
Add onion and garlic and saute till light golden brown .[ dont burn]
Add the palak and saute for 4 minutes.
Add 2 cup water and mix well. Bring it to a boil .
Once it starts boilng off the flame and allow it to cool.
Blend / grind it to a fine sauce .
Strain it . [ optional ]
Heat a sauce pan add the palak sauce + salt and cook for a minute .
Mix well the corn flour in milk [ see that there are no lumps ].

Add this mixture to the palak . Stir and cook for 2 minutes.
Off the flame .
Add pepper powder / mixed herbs or oregano while serving .
Garnish with fresh cream and serve hot with garlic bread.

for making it more aromatic.. use aromatic powder or maggi magic cubes.
