◇Ingredients (18cm × 18cm square pan) (8 bars)
– DRY INGREDIENTS –
1 cup GF rolled oats
1 cup Puffed quinoa
30g walnuts, roughly chopped
30g almonds, roughly chopped
30g pepitas
10g coconut flakes
10g coconut sugar
¼ tsp salt
2 tsp ground cinnamon (optional)
– WET INGREDIENTS –
20g rice bran oil
50g brown rice syrup
1 tsp vanilla extract
dark chocolate to drizzle (optional)
â—‡Preparations
– Place baking paper in the pan
– Preheat an oven to 150℃
â—‡Instructions
1. Combine all dry ingredients in a large bowl using spatula.
Add all wet ingredients and incorporate well.
2. Transfer the mixture into the prepared pan.
Press down using a spatula for an even layer.
 ※Firmly pack the mixture in the pan to make crispy bars.
Bake at 150℃ in the preheated oven for 40 minutes.
Rotate the pan halfway through baking.
3. When it is ready, remove the pan from the oven.
Let it cool for 10 minutes in the pan. ※it’s soft and fragile right after baking.
Take it out of the pan and let it cool completely on the wire rack.
4. Slice it into 8 pieces (or as you like) carefully using a bread knife.
If you like, add melted dark chocolate on top (optional).
