Poha or Pohe is a popular Maharashtrian snack and breakfast made with flattened rice, peas, potatoes and onions. It is a quick, easy and healthy recipe and can also be taken to office.

Healthy Poha for breakfast

Ingredients
Poha – 2 cup
Oil- 1 to 2 tbsp
Coriander Leaves- (finely chopped)
Peanuts – 1½ cup
Kaju…optional
Lemon juice – 1
Curry Leaves- 8 to 10
Onion.. finely chopped
Tomato- finely chopped
Green Chilli- 2 (finely chopped)
Turmeric Powder -1tsp
Black Mustard seeds – ½ tsp
Jeera- 1/2 tsp
Salt
Besan sev (बेसन सेव) or Ratlami Sev

How to make Poha

1. Put poha in a sieve and clean it with water. Keep in mind, do not soak the poha in water for a long time. So let it remain in the strainer.
2. Put oil in a pan. Add peanuts and Kaju, roast till light brown. Remove and keep aside.
3. Add little more oil in the pan.
Add mustard seeds, jeera, curry leaves, onions and green chilli.
4. When the onions turn light golden in color, add tomato to it.
5. Add turmeric, red chilli powder and fried peanuts and Kaju.
6. Add salt and poha to it and mix well
7. Switch off the flame and add lemon juice and chopped green coriander to it.
8. Take out in a bowl and serve garnished with remaining green coriander and lemon peel.
